Black Bean Chicken

I was recently surfing the web for new/healthy easy recipe's. My family and I love trying new things and I came across a SUPER easy crock pot recipe that I want to share with you today...

Black Bean Chicken

You will need:

Crock pot
2 cans of corn
1 can of black beans
2 cups of salsa (seperated)
4-6 boneless skinless chicken breasts

To cook:
Toss the corn in
toss the beans in
toss 1 cup of salsa in
Stir together to mix
put the chicken on top of the mixture
pour the last cup of salsa over the chicken

I love this recipe because it's sooo easy and you can even throw the chicken in frozen. This cooks on low for 6 hours. It's so good and the house smells AMAZING while it's cooking. The recipe I found also calls for 8oz of cream cheese to be put in about 30 minutes - 1 hour before you serve, you're supposed to stir it around to get the cheese all melted and then serve it BUT we have found we like it better with out the cream cheese.

We serve this with french bread.

I hope you try this recipe it is so so good. I forgot to take a picture when we made it the other night so I googled a picture that is as close to what it looks like as possible, our serving sizes aren't nearly as big as the picture though and it's not that soupy either *smiles...enjoy!

  1. We recently did chicken in the crock pot for the first time. LOVED it! So easy and the chicken was so tender. Can't wait to try this recipe!

  2. Do you drain the cans of corn and beans or just add the liquids from the cans without draining?
