Party Snacks

It's the time of year when we are either going to or hosting get togethers.  And, when we go to or host these little soiree's there is food involved.  So, today, I am going to share one of my all time favorite go to snack foods...Chips and Queso / Salsa.  Actually, the Salsa recipe is from a friend of mine.  The chips...well, let's face it, I use store bought chips but if you have the desire and the time, you certainly could make your own 'home-made' chips.

Debi's Queso
1 2-lb box of Velveeta
1 can Rotel Tomatoes & Green Chiles
1 Tube RB Rice's Chili (Optional)

Dice cheese into cubes.  Put cheese in a crock pot.  Open and pour entire can of Rotel in crock pot.  Turn crock pot on medium or high to get the cheese started melting.  Stir occasionally.  If you want a 'meaty' dip, you can add up to 1 tube RB Rice's Chili...any flavor you like.  Once all the cheese is melted, turn the crock pot to low, still stirring occasionally.

All ingredient amounts may be adjusted 'to taste.'
2 - 3 tbsp. onion
1/2 c. cilantro leaves
1-2 cans whole tomatoes
1 - 1 1/2  tsp. salt
pinch of garlic powder
approx. 1 tbsp. lime juice
1/8 c. green chile's
**Optional
fresh tomatoes in addition to canned

Mix ingredients in a blender or food processor.  May be served room temperature or chilled.  Often, when I serve these tasty snacks at Christmas time, I will purchase 'colored' chips.
