What's for dinner?

Good morning?  How early in the day do you start considering the question "What's for dinner?"  Some people make 'weekly' menus.  Some people make 'daily' menus.  And, if you are like me...it's a matter of what's on the schedule for the evening.  Unfortunately, we are so busy that we don't get to eat at home as often as we would like.  However, with the season changing to fall and winter following close behind, we do get to eat at home more. 

On the menu at my house tonight:  Pan-fried Pork Chops and Roasted Broccoli with Garlic, Onions & Crushed Red Pepper Flakes!  Yummmmm!!!

Pan-fried Pork Chops
Thick Cut, Boneless Pork Chops 
    Take the meat out of the frig about 30
        minutes prior to cooking
    Season to taste with salt / pepper on
        each side
I like to coat my pork chops lightly with flour
which I season with garlic salt and pepper

Coat the bottom of a skillet lightly with Extra Virgin Olive Oil.  Over medium high heat, sear the chops on each side.  Once seared, lower the heat to medium-low and cook for about 10 minutes.  Turn and cook for about 4 minutes.

These chops are so tender and tasty.

I also make what I call 'crumbs' any time I 'fry.'  What I do is take the leftover 'flour mixture' and add water to it.  Mix well.  The 'batter' should be the consistency of cake batter.  Drop by spoonfuls in the skillet next to the chops.  Flip once.  They are an odd addition to any fried meat yet they are quite tasty.

Roasted Broccoli with Garlic, Crushed Red Pepper Flakes & Onion
This is a yummy alternative to steamed brocolli!  It has become my new favorite way to eat broccoli.

Fresh Broccoi, cut into florets
2-3 cloves of garlic, finely chopped
onion, finely chopped
crushed red pepper flakes, to taste
salt & pepper, to taste
Extra Virgin Olive Oil, enough to lightly coat

Mix all ingredients in a bowl.   Line a baking sheet with aluminum foil for easier clean up.  Spread broccoli mixture onto baking sheet in a thin layer.  Bake at 450* for 20 minutes until broccoli is slightly crispy and tender. 

Who knew that broccoli could be so nutty and delicious?

Of course, you can add a nice green salad to go along with this.  It's a great way to start a nice evening at home!

  4. I am one of those crazy people that wakes up thinking about "what's for dinner." Those pork chops look awesome, I'll be giving that a try :) I love roasted broccoli... have you tried it with cauliflower? It's scrumptious... so good I can eat an entire head for lunch!
