Raspberry Chocolate Walnut Baked Oatmeal

Raspberry Chocolate Walnut Baked Oatmeal

3 cups quick cooking oats
1/2 c. brown sugar
1 cup milk
2 T olive oil
2 eggs
2 tsp baking powder
1 tsp salt
2 tsp vanilla
3 mashed bananas
1 cup frozen raspberries
1/2 c. chopped walnuts
1/2 c. chocolate chips
3 T flax meal

Combine all ingredients in a bowl and pour into a greased 9x13 pan. Bake at 350 for 20-25 minutes.  Cool.  Cut into squares.  This baked oatmeal should be firm.  To freeze- place cut squares on a large pan and put in freezer overnight.  Transfer to a Ziploc bag.  Take out what you want to eat and let thaw on the counter for an hour. Or thaw in microwave for 30 seconds to 1 minute depending on desired softness.
