Flag Fruit Pizza

Since it is the week of Independence Day, I thought I would share a patriotic recipe that I really love! I have made it several times and it is always a hit! It is a great dessert to take to family gatherings, and you can change up the theme for each holiday by using different fruit. This particular recipe is for the Flag Fruit Pizza. Enjoy!

Flag Fruit Pizza

Ingredients:
1 20-ounce pkg. sugar cookie dough
1 1/2 cups cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla extract
Strawberries
Blueberries

Glaze:
1/3 cup sugar
1 teaspoons cornstarch
1/2 cup berry juice

Directions:
1. Heat oven to 375 degrees.
2. Grease 9×13″ pan and press cookie dough to form a crust. Bake for approximately 10 minutes (or until golden brown). Cool.
3. Mix together cream cheese, sugar, and vanilla. Spread on cooled cookie crust. Arrange strawberries and blueberries to form a flag.
4. To make glaze, place sugar, cornstarch, and berry juice in a saucepan. Bring to a rolling boil, stirring often. Cool.
5. Use a fork to make small holes in the pizza (this will allow the glaze to seep through — yum!). Pour the glaze over the pizza.

NOTE: If you don't care for cream cheese, you can use regular buttercream frosting instead, or even whipped cream. And you can always omit the glaze as well.
