Creamy Broccoli Soup THM-S


Tasty Tuesdays or THM (Trim Healthy Mama) Tuesdays?! :) Today's recipe is based on the Trim Healthy Mama lifestyle but if you aren't following that eating plan you can still easily make this delicious soup for your family!


Here's the recipe:

Creamy Broccoli Soup

adapted with the help of Melissa Fournier

1 package frozen broccoli
3 c chicken broth
1 small onion
1/2 c chopped bacon
1 T butter
1-8oz cream cheese
1 c shredded cheese
1/4 t garlic salt
1/2 t pepper
1 t salt

Instructions:
Cook broccoli in the chicken broth until soft. 
In the mean time fry butter, onion and bacon in a skillet.
Once the broccoli is soft add the cream cheese to it and let it melt. Do not drain off the chicken broth. Add the onion and bacon and the remaining ingredients. Heat until the cheese is melted.
Enjoy!

This was one of my favorite meals with THM and is in my recipe book to make again :)

  8. So I made this using a 1kg package of mixed broc and caul and i upped the broth to 6 cups. Kept everything else the same except I subbed turkey bacon, because that's all i had. it's super delish :) served with brown rice for the kiddos :)

  11. OH MY! I made this for the first time tonight - subbed cauliflower for the broccoli, and added a cooked chicken breast, diced, for a little extra protein. It. Is. AMAZING! :) Thank you for the incredible recipe!

  13. I kept this in a crock pot for our family reunion. It worked perfectly! I made a double batch and it all went so quickly! Needless to say it will be making a repeat appearance at future family functions, as well as on my regular menu rotation ��

  15. This is some awesome soup- a little too salty for my taste. I prefer to go low on the salt and let each guest add their own. I would suggest just 1/4 to 1/2 tsp salt. It will still be plenty salty. But this was really easy and it's so much better than I expected! Thanks for sharing!

  18. This soup is wonderful! The only thing I change is that I run the broccoli through the food processor after it softens in the broth. This way, I don’t get big chunks of broccoli, but I get the same great flavor! I would double this recipe for a larger family. It goes quick!
