Baked Cheesecake THM-S


We always love a good Baked Cheesecake in this house, and especially one thats Sugar free and healthy!
This is a Trim Healthy Mama Recipe again but it isn't hard to make a few adjustments if you aren't following that lifestyle and like your sugar :) 


Baked Cheesecake

Crust: 
3/4 c almond flour
1/4 c flax meal
1 T xylitol
1 1/2 T melted butter
Mix and press in bottom of 8'' baking pan. Bake at 350* until golden. (approx 5-8 min)
Cheesecake:
2 - 8 oz cream cheese
1/2 c xylitol
1 t liquid stevia
2 eggs
1 t vanilla
1/2 t salt
Mix well and bake at 350* for 45 minutes or until center is just a little jiggly... As it cools it will set up more.
Top with your favorite fruit filling and enjoy!

***If you are not following THM, simply make a graham cracker crust. Grind approximately 8-10 grahams in blender and substitute the xylitol for sugar. For the Cheesecake: eliminate the xylitol and liquid stevia and use 1 c white sugar.
