Easy Broccoli Soup

Wintertime is here and although living so far south means we hardly get any snow, *tears* I still love this time of the year! Christmas is my favorite holiday and there is nothing better then a cozy evening at home, with my family, beside the fireplace, with the soft glow of the Christmas tree and all the pretty decorations surrounding us. It gives me such a contented feeling.

This year I have heard of quite a few young men dying or being seriously hurt and it has left me pondering death and life! Why do young people die? Why do we have to see so many people suffer and cry wondering why their loved ones had to die so young?! Especially when they leave young children and a wife behind. But at times like this I choose to trust that God has a reason for allowing it and breathe a prayer for those that are hurting. Two years ago my husbands step-dad passed away on Christmas eve and it has a way of changing the whole Christmas season.

Anyways on to the recipe I have for today.


This is a great Soup those chilly evenings when you just wanna stay snuggled up inside ;)

Easy Broccoli Soup

1/4 c chopped onion
1 T butter
1 T flour 
2 c milk
4 oz cream cheese
1/2 lb velveeta cheese (cut into 1/2 inch cubes)
1 - 10 oz package broccoli (frozen, chopped and cooked)
1/2 c carrots (cooked) optional
1/4 t ground nutmeg
1/8 t pepper

Directions: 

Cook and stir onions in butter in medium saucepan for 3-5 minutes, or until onions are tender. 
Whisk in flour until well blended.
Add milk and cook and stir on medium heat for 2 minutes, stirring occasionally.
Add cream cheese and cook and stir for 2-3 minutes, or until melted.
Stir in remaining ingredients and cook until heated through, stirring occasionally.

Never be afraid to trust an unknown future to a known God.
