Chicken Taco Dip


Anyone out there ready for Christmas yet? I'm holding my hand high over here ;) I am ready for life to slow down again and be done with the hustle and bustle, but I will just enjoy it one day at a time until its past.
Today I am sharing a delicious and simple Chicken Taco Dip with you that is great with chips! Its so simple to make and can be used as an appetizer, or we often just have it for a light dinner.


So here's the recipe:

Chicken Taco Dip

3-4 chicken breasts (approximately 3 cups)
8 oz cream cheese
1 c sour cream
1 pint salsa
1 1/2 c shredded cheese
2 t taco seasoning

Directions:

  • put chicken breasts in medium crockpot with a a little water and turn on high for 3-4 hours or low for 6 hours. I leave it in until it practically falls apart. (Optional: sprinkle salt on each piece of chicken as a tenderizer) If you don't have chicken breasts you can also use canned chicken.
  • drain the liquid off of the chicken and shred it in little pieces
  • add the rest of the ingredients and leave on low heat for another hour until the cheese is melted and its hot all the way through
  • serve with chips
If you have any left overs, put a small amount in a tortilla and wrap it up. Bake at 350 for about 30 minutes and eat up! Delicious!
