A new meal adventure

This past weekend my husband and I decided to sign up for eMeals. We had looked into this last year but decided it wasn't right for us at the time. I would highly recommend it for EVERYONE though. For more information click HERE and then click on the link to their website.

My husband and I signed up for the Healthy Eating Meal Plan and so far the recipe's have been really easy to follow and actually really tasty as well! Last night we made Greek chicken and potatos with a fresh tomato salad...here's the recipe!

You will need to marinate the chicken for up to 2 hours prior to baking...for the marinade you will need:

1/2 cup lemon juice
1/2 cup low sodium/fat free chicken broth
2 table spoons olive oil
1 tablespoon minced garlic
2 tablespoons dried oregano

For our family of 4 I chopped up 4-6 pieces of chicken into bite size pieces then I put it in the marinade for 4 hours.

Preheat the oven to 350* Peal and quarter potatos (I did 5 potatos) put in a sprayed baking pan and pour marinade and chicken over the potatos, toss to coat the potatos and chicken together. Bake for an hour and 10 minutes.

For the tomato salad you will need:

1 pint of grape tomatos, halved
2 table spoons lemon juice
1 table spoon honey
1/2 teaspoon dijon mustard
1/4 teaspoon salt
2 table spoons olive oil

Combine all the ingredients drizzle over the halved tomatos.
