Teriyaki Chicken and Fried Rice

I love this recipe I want to share with you today!

You will need to make the rice in the morning or even the day before you plan to cook this recipe, the rice needs to be cold when you fry it.

What you will need for the teriyaki chicken is:

 4 boneless skinless chicken breasts (or more depending on the size of your family)
3/4 C Soy Sauce (I usually use light or low sodium)
1/4 C Garlic Wine Vinegar
1/2 tsp Garlic Powder
1 Small bay leaf
1/2 tsp ginger (powder)
1/2 tsp sugar
1/4 tsp pepper

Combine all ingredients (except chicken) in a bowl, jar, big container of some kind, chop the chicken into strips or bite size pieces and cover the chicken with the marinade, let sit for 30 minutes-2 hours. Place the chicken on a cookie sheet under the broiler.

Be careful! This chicken only takes about 5 minutes on both sides to cook under the broiler. DO NOT leave the food and come back to it, it WILL burn!!

What you will need for the rice is:

Boil in a bag brown rice according to the size of your family (boil in a bag is easier, but any rice will be fine) cook the rice the morning of or the day before you plan to cook this meal. Place the rice in the refridgerator until you're ready to continue with preparations.

2 Eggs
1 tsp salt
pepper to taste
2 tblsp of oil for frying (I use grape seed oil but veggie oil, olive oil any oil will be fine)
1-2 tblspn light or low sodium soy sauce

1) scramble the two eggs making sure they are in small crumb type pieces and set aside
2) Pour 2 tblspn oil in a pan and heat up for a few seconds
3) Pour the rice in the oil, stiring breaking the stuck together pieces with a fork or spatula
3) Add the soy sauce and stir the rice making sure it's all coated
4) Add the eggs stirring to coat everything

After this I add a veggie, usually broccoli that I have steamed (the steamer bagged frozen veggies works great and is super easy and quick!)

Stir until everything is coated in the soy sauce serve with chicken and enjoy!!
This recipe may sound like a lot of work but it goes QUICK you can't leave it. The chicken takes maybe 5 minutes and the rice takes maybe 6-7 minutes so super quick and so tasty! Check out the picture I took a few nights ago when I made this...(don't mind the colored elephant page, my kids were coloring before dinner ;)
