Tasty Tuesday ~ Stuffed Peppers

Today I want to share a dinner with you. It's a huge hit for my family every time we make it.

You will need:

4 whole green peppers (or however many family members you have)
Boil in a bag rice (you won't be cooking this) 1-2 bags
Tomato sauce 1-2 cans
Ground beef, turkey or chicken (we always use turkey)
Motzerella cheese

Preheat the oven to 400*

First cut the tops off each pepper and then take out the inside pit/seeds. You can save the top of the pepper chopped or whole for other meals, you won't be using the top for this dish.

Place each pepper in a kettle of boiling water, you will boil them for 10-15 minutes or until tender

While you're boiling the peppers, brown the meat in a skillet..when fully cooked pour the rice and tomato sause in the meat, stir together then let simmer for a while to get the rice tender.

When the mixture is done and the peppers are tender place the peppers in a baking dish and spoon out the mixture into the peppers all the way to the top of each pepper, top with motzerella cheese or cheddar cheese, whatever your preference is then place into the preheated oven for 30 minutes.

Tip: The 30 minutes is to melt the cheese and finish cooking the rice, we always turn the broiler on for a few minutes after the 30 minutes is up to brown the cheese. You can also use a can of diced tomatos in your meat mixture, I did this the last time I cooked these and it turned out really good, that also cuts down on the tomato sauce you have to use, but you want the mixture moist so the rice will cook on simmer and in the oven.

These peppers are soo filling but my husband usually cooks a baked potato for himself since he doesn't eat he pepper, just the mixture *smiles*
